The New York strip is cut for a firm, satisfying bite with concentrated beef flavor. It cooks evenly, holds heat well, and performs reliably on the grill or in cast iron.
The tenderloin filet is lean and extremely tender, with a fine grain that delivers a smooth texture without heavy fat. It cooks quickly and benefits from simple preparation and careful timing.
Both cuts are hand-cut and wet aged to improve tenderness while preserving the natural structure of the meat. All beef comes from cattle raised on open pasture and handled with consistency from start to finish. No added hormones. No antibiotics.
