Like all 2R beef the filets have excellent flavor and tenderness. Hard to beat as usual, having visited the ranch I understand why. These filets were so very tender and flavorful. The best ever. How I cooked them: I salt and peppered them before I put them in a pre heated cast iron skillet on high with melted butter to sear each side about 2 minutes. I then put the skillet in the pre heated oven at 415 degrees for 5 minutes to get the filets between medium rare to medium. I also added some butter mixed with garlic to put on top of filets when plated.
This is the go-to cut for me and my wife. She makes it in a cast iron pan in the oven. The steaks cook in their own juices. They are delicious, quick and just the right size.
Very juicy and great taste, this is by far the best tenderloin filet I ever tasted.
