This is the classic filet portion. At 5 to 6 ounces, it is the size steakhouses have served for generations: all of the tenderloin's tenderness in a portion sized for one, with room left for the sides.
Each filet is cut from the tenderloin and hand trimmed in the butcher shop on our ranch. All-natural Black Angus, with no added hormones or antibiotics. Filet does not hide mistakes, and this one does not need to: the texture is clean, the flavor is mild and natural, and the cut stays tender from edge to center.
Each filet is wet-aged a minimum of 30 days, which builds tenderness without softening the structure. Because the cut is lean, cook it hot and fast and do not take it past medium.
If you want the filet to carry the whole plate, look at our 7 to 8 oz filet, cut larger on purpose. This 5 to 6 oz is the traditional steakhouse portion, sized for a full dinner around it.

FAQs
5 to 6 oz or 7 to 8 oz, which should I choose?
Choose the 5 to 6 oz for the classic steakhouse portion, especially with rich sides. Choose the 7 to 8 oz when the filet is the whole event and you want a thicker, more substantial steak.
What temperature should I cook it to?
Medium rare, about 130 degrees after resting. Filet is lean, so it rewards a short, hot cook and dries out past medium.
How many filets should I order per person?
One per person.
How does it ship, and how do I store it?
It ships frozen in insulated packaging and keeps in your freezer until the day before you cook it. Shipping is free on orders of $249 or more, and on orders of $149.99 or more in Texas and Oklahoma.
