The cut that runs the Brazilian grill.
Picanha is the top sirloin cap, the celebrated cut of the Brazilian churrasco. It is a 2 to 3 lb roast wearing a thick cap of fat, and that cap is the whole point: as the roast cooks, the fat bastes the meat from the outside, keeping it juicy and giving it a flavor no lean cut can match.
You may know it as coulotte, rump cap, or top sirloin cap. Roast it whole as a centerpiece, or slice it into thick steaks and grill them the Brazilian way. Either way, do not trim the fat cap off. Score it, salt it, and let it work.
What's in the pack
- One whole picanha roast (top sirloin cap), 2 to 3 lbs
- Grass fed, grain finished, all-natural Black Angus
- No antibiotics, no added hormones
- Wet-aged a minimum of 30 days
- Vacuum sealed and shipped frozen
Cooking notes
Score the fat cap lightly in a crosshatch and salt generously. Roast or smoke to 125 to 130 degrees internal for medium rare, then rest 15 minutes. Slice against the grain, keeping a piece of the cap on every slice.

FAQs
Do I trim the fat cap?
No. The cap is what makes picanha picanha. Score it so it renders evenly, and it will baste the roast as it cooks.
Roast it whole or cut it into steaks?
Both are traditional. Whole makes the better centerpiece. Sliced into thick steaks with the cap on, it grills fast and eats like a richer sirloin.
How many people does it feed?
A 2 to 3 lb roast feeds 4 to 6 people as a main course with sides.
How does it ship, and how do I store it?
It ships frozen in insulated packaging and keeps in your freezer until you are ready. Give it 24 to 48 hours in the refrigerator to thaw. Shipping is free on orders of $249 or more, and on orders of $149.99 or more in Texas and Oklahoma.
