The bone-in New York strip is about balance.
It sits right between richness and structure. Leaner than a ribeye, firmer than a filet, this cut delivers clean, beef-forward flavor with enough fat to stay juicy on the grill or in a hot pan. Leaving the bone intact helps insulate the meat as it cooks and adds depth to the finished steak without overpowering it.
These steaks are cut from cattle raised on open pasture and handled with consistency from start to finish. Strip steak does not rely on heavy fat to cover mistakes. Texture, timing, and calm handling all matter here. When the beef is right, the strip shows it.
Each bone-in strip is hand-cut thick and wet aged to improve tenderness while keeping the steak’s natural structure intact. This cut holds heat well, sears cleanly, and rests without losing moisture. It performs equally well on the grill or in cast iron and shines when cooked medium rare to medium.
