Not Your Momma’s Meatloaf
This easy recipe is a favorite with our butcher Carl Garber and his wife DeAnne. It makes a great dinner with mashed potatoes and steamed vegetables. Then it makes a great lunch the next day with meatloaf sandwiches.
- 2 pounds Wellborn 2R Ground Beef or Wellborn 2R Ground Sirloin
- 1 box Stove top stuffing
- 3 eggs
- 8 oz grated pepperjack cheese
- 1 can original Rotel tomatoes
- 4 oz real bacon bits (NOT the hard crunchy ones)
Mix the ingredients together and press into loaf pan. Top with ketchup or BBQ sauce. Bake one hour at 350 degrees. Let rest 10 minutes before slicing and serving.
Want to change things up a little? Its super easy with this recipe. Add 2 tablespoons of Italian seasoning to the meat mixture and you’ve got yourself some meatballs. Brown them in a skillet on the stove, add your favorite spaghetti sauce and you now have an amazing spaghetti and meatball dinner. Fantastico! Don’t forget the parmesan. Oh, and maybe some garlic bread.

Double the recipe above, split it in half and add Italian seasoning to one of the halves. Make the meatballs ahead of time and put them in the freezer to thaw before cooking. You can serve both these meals just a couple nights apart and your family won’t even know its basically the same exact recipe, just served a different way. Shhhhh…. It will be our little secret.
